Did someone say simple and quick, but not the usual recipe?
Cannellini bean cream, grilled Romanesco, sweet-and-sour onions, and Taggiasca olives from Pesto Fiore: a dish you can easily make at home in just a few minutes — vegan and seriously flavorful.

How to make it:

  1. Prepare the cannellini cream: blend the cooked beans with olive oil, salt, pepper, and half a clove of garlic.

  2. Steam the cauliflower for 8–10 minutes, then marinate it with salt, pepper, and smoked paprika.
    Sear it in a pan with a drizzle of oil and half a clove of garlic until golden brown.

  3. Plate it: spread the cannellini cream as a base, place the cauliflower on top, and garnish with sweet-and-sour onions and Taggiasca olives.

  4. Enjoy it with toasted bread — simple and fast.
